The brewery started in 2004, brewing small batches in a workshop on Bärenschanzstaße. Moving again in 2007 to a larger space before the new brewery building was completed in 2016 in Nuremberg-Höfen. With larger tanks, the brewery started to brew specialty beers alongside longstanding favorites. Every year the brewery has an anniversary party in May to celebrate another year of Schanzenbräu brewing.

Having grown and moved over the past few years, Schanzenbräu has adapted and perfected their brewing along the way. The newer building has provided an efficient tool to create new brews. Emphasizing local culture as well as local ingredients, built on a strong local foundation of community.
Rotbier or “Red beer” is a historic German beer style from the Franconian region, particularly around Nuremberg.
